This is my  little son Kevin’s Favourite flavour….whenever he asks for a cake it would be Chocolate Vanilla Mix Cake!!!!He likes this with lots of icing…but here its a simple cake only.

 

Things you need are that of a basic vanilla cake….

 

Ingredients

Butter (Cooking Butter) -200gms

White Cooking Butter

Castor sugar/powdered sugar – 200gms

Eggs – 4 whole

Plain Flour/Maida – 200gms

Baking powder – 1 tsp

Baking soda – 1/4 tsp

Vanilla essence -1 tsp

Cocoa powder – 2 tbsps

Milk – 3 tbsps

 

Method

In a mixing bowl take butter at room temperature and add the powdered sugar cream together till soft and add eggs one after the other and combine well…do not overbeat it may curdle….

Sieve the dry ingredients..plain flour,baking powder and baking soda and keep.

Mix cocoa powder in the milk and keep.

Now add the vanilla essence to the butter sugar mixture and fold in the dry ingredients and incorporate  the air well into the batter by folding the flour only in one direction.

Divide the batter into two portions and  in the second portion mix in the milk  and cocoa mixture and combine well.

Preheat the oven to 180 degree C .

Grease the cake tin and dust with flour and pour in the vanilla batter first and then the chocolate cake batter over the vanilla and pass a knife over the batter.

Now place the cake tin in the middle rack and bake at 180 degrees C for about 25-30 mins as there is hollow in the middle.

When the cake tin is put upside down you get this wonderful chocolate vanilla mix cake…

You know what….this is the perfect Coffee Cake for Tea Time!!!!!!!This cake tastes better the day after you bake it…Very simple and easy….try out this and enjoy baking.

Things you need are

Cooking Butter(White Butter) -200 gms at room temperature.

Castor sugar or powdered sugar – 200 gms

Eggs whole  – 4large

Plain flour/Maida – 200gms

Baking powder – 1 tsp

Baking soda – 1/8 tsp

Instant coffee powder – 2 tsps  mix into 2tbsps of warm water

Method

All you need to do first is sieve the dry ingredients ..plain flour,baking powder and baking soda and keep.

Take a mixing bowl drop in the butter and powdered sugar and cream well till soft,can use a normal whisk or hand mixer.

Add eggs one by one and whisk gently,pour in the coffee mixture and combine.

Lastly fold in the sieved dry ingredients and combine by folding technic  to get the cake batter

Now preheat the oven to 180  degrees .

Take a cake pan/tin and grease it with butter and dust flour and shake off the excess flour and pour in the cake batter into the cake tin.

Place the cake tin in the middle rack and bake for about 20-25 mins.

Check the cake after 15-20 mins with a skewer or skarp knife for doneness….the skewer should come out clean..if something is sticking …bake further a couple of mins till done.

When done remove and place to cool and turn upside down on to large platter.

Butter Chicken -2

This is also my signature dish ,experimented and tasted…..I would say confidently that this dish will satisfy any pallette..be it Indian or Asian ..or any other part of the world..I have posted a Butter Chicken recipe before also in my blog so thats why now added 2 to the title….and this recipe is totally my combination of different ingredients than in the other recipe and it was so amazing….try and taste..

Ingredients

Boneless chicken – 300 gms.cut into fine cubes

Sa;t to taste

Chilli powder 1and 1/2 tsp

Orange red food colour – 1 pinch

Onions – 1 large finely chopped

Green chilli – 1-2 mince finely

Ginger garlic paste -1 tsp

Tomatoes – 3 med wash and dice

Fresh coriander/Cilantro – a hand ful chopped

Yoghurt/Curd – 4 tbsps

Biryani masala – 1/2 tsp (See recipe in my homemade spice powders – category)

Dry coconut – 1/2 cup grated

Garlic cloves – 2 small

Butter – 10-15 gms or 1 small cube

Oil – 3 tbsps

Preparation

1-First take a bowl and combine chicken,salt ,1/2 tsp chilli powder and food colour,mix well and keep 10 mins.

2-Blend Tomatoes and fresh coriander into a puree and keep.

3-Powder dry coconut and garlic cloves.

Method 

Heat a large wok and add oil first and drop in the onions and fry 2 mins and add the ginger garlic paste and fry further.

Now add the minced green chillies,and marinated chicken and continue to stir  to avoid sticking to the pan for 2 more mins.

Add the remaining chilli powder and lower the heat and add yoghurt and stir continuosly to avoid curdling now add the tomato puree and fry till raw smell of tomatoes is vanished.

Lastly sprinke biryani masala and coconut powder continue stirring on med heat till chicken is tender…adjust salt and 1/2 cup of water and cook 3-4 mins finish the dish by dropping in the butter and fresh coriander a little chopped and combine well.

Turn off the heat and serve with Tandoori Rotis or any Indian Breads(Chapatis/Rumali Rotis/Nans/Parathas…)

This dish is finished injust 12-15 mins..but you need to stir continuosly to get the best result!!!!

Feel like eating Tandoori Roti….Sure you can even without having a TANDOOR OVEN at home…just try this method of cooking…its fun and worth tasting at the end…

All you need is to prepare dough…and to start with you need the below  mentioned Ingredients.

Plain flour/Maida – 2 cups

Whole wheat flour -1 cup

Salt to taste

Baking soda -2 pinches

Baking powder – 1/2 tsp

Yoghurt/Curd -3 tbsps

Oil – 2 tsps

Water to combine the flours to make dough.

Method

First take a large mixing bowl and combine all the above listed ingredients to get the dough…should look like chapati dough…not too loose or too hard !!!…but just soft and firm.

Cover the dough with a damp cloth and keep covered for about half an hour.

Now divide in to equal portions….you can make nearly 8 rotis with the prepared dough.

Roll out the dough into discs a bit thicker than how we make chapatis and keep

Now here is the Tricky Thing…Place the griddle/tawa on the burner or cook top and heat well till almost it smokes.

Then sprinkle a handful of water onto the hot griddle and IMMEDIATELY put the roti on to the tawa and gently press down so that it sticks to the tawa and let the roti bubble up as shown…

Let it bubble well all over and get cooked on that side…You may burn it or undercook it for the first time but do not worry….Try …and try.

Now this is the crucial part of the TANDOORI ROTI…..now you need to remove tawa from the burner and reverse the roti side down…roti does not fall but you need to rotate the tawa so that the flame touches all over and cook the other side  as shown…

Take care that you not burn …let brown and bubble up…now remove with the spatula and stack till you finish all.

These Tandoori Rotis are so soft on the inside and crisp on the out side…and tastes so different because of the ingredients used to prepare dough….i have tried this by myself and this came out well….serve restaurant style food to your family at home.

•Bayleaf – 1
•Cinammon – 2 inch piece
•Cloves – 5
•Green cardomom – 5
•Black cardomom – 1 large
•Black pepper corns – 1/2 tsp.
•Shajeera – 1 tsp.
•Fennel – 1/2 tsp.
•Cumin – 1/2 tsp.
•Mace – 1
•Nutmeg – 1 pinch
•Staranise – 3 petals

Dry roast all these ingredients and make into powder.
This will make approx. 1 tbsp of biryani masala.

Use this biryani masala for Chicken Biryani or Mutton Biryani or even for Vegetable Biryani.

All you need for this wonderful recipe is

Potatoes – 2 large( Boil peel and mash)

Carrots – 2 med (Boil peel and Mash)

Green peas – fresh or frozen 1 cup(Boil and crush slightly)

Onion – 1 med finely chopped

Green Chilli – 1-2 deseed and mince

Fresh herbs

Dill – 2tbsps chopped

Fresh coriander – 2tbsps chopped

Fresh mint – 1 tbsp chopped

Salt as per taste

Garam masala – 1 tsp

Oil for deep fry

Cornflour – 1 cup

Egg – 1 whole

Bread crumbs – 1 cup

Method

First you need to take the boiled potatoes,carrot and green peas and mix well.

Then add the chopped onion,green chilli and fresh herbs mentioned and add the salt and garam masala,mix well to combine the mixture.

Now shape into your desired shape and keep as shown

The next step is to coat them in flour,egg and bread crumbs.

Always remember the Standard Procedure of coating any thing you would fry like meat balls or fish to be coated and fried…follow the F E B…Flour,egg and Bread crumbs…

Coat the cutlets in flour first to look like this

Then dip in the beaten egg and coat with the bread crumbs and deep fry till golden brown.

Serve hot as an evening snack…or an appetizer.

Sandwich Bread Slices – 6

Pizza sauce or tomato ketchup – 4-5 tbsps

Mozzarella Cheese shredded – 1 cup

To prepare the vegetables for topping you need

Oil – 1tbsp

Sliced onion – 1 cup

Sliced carrot 1/2 cup

Green chilli – 1 minced

Spring onion – chopped 1/2 cup

Salt and Pepper for seasoning

Method

First heat a pan and add oil saute the sliced onion,carrot,green chilli and white part of the spring onion fry well and season it with salt and pepper and take off the burner and keep.

Take the bread slices and place them on the baking tray and spread sauce well,then spread the prepared veggies and remaining spring onion greens.

Now top with the Mozzarella Cheese

Grill till the cheese melts and slightly browned..thats it..Easy Cheesy Vegetable Pizzas are ready to Gobble up.

If you do not have the grill oven can use your Microwave oven…But this takes 1-2 mins only and the cheese do not brown…only melts!!!!
