Chicken with Mixed Greens

 

CHICKEN WITH MIXED GREENS
(Gongura(red sorrel leaves), Menthi(fenugreek), Chukka(Generally called sour spinach), Fresh Coriander(cilantro)

Ingredients for Chicken Curry:

•Chicken – 1/2 kg.
•Onion – 1 large
•Tomatoes – 1 large
•Green chillies – 1 big
•Ginger garlic paste – 1 tbsp.
•Salt
•Red chilli powder – half tsp.
•Turmeric – 1/4 tsp.
•Coriander powder – 1/2 tsp.
•Garam masala – 1/2 tsp.
•Oil – 2 tbsp.
•Curry leaves – 1 sprig

Green paste ingredients and Method:

•Gongura – 1 bunch/pack
•Menthi – 1 small bunch/pack
•Chukkakura – 1 bunch/pack
•Fresh Coriander – 1 bunch/pack
•Onion – 1 large
•Tomato – 1 medium
•Green chilli – 4-5
•Salt
•Turmeric – 1/4 tsp.
•Water – 1/2 cup

•In a pan/ vessel, boil the above ingredients except fresh coriander, till water evaporates and the ingredients are cooked well, cool and transfer into a blender jar along with the cleaned and chopped fresh coriander. Blend Coarsely and keep aside.

Chicken Curry Method:

•Heat a pan/ wok, add oil, onion, saute 2-3 mins. add ginger garlic paste, fry till golden brown, sprinkle little water and a pinch of salt if it sticks to the pan and stir well.
•Add the cleaned, washed and drained chicken into the pan, stir well till oil seperates for about 4-5 mins.
•Now add slit green chilli, curry leaves, turmeric, salt, red chilli powder, coriander powder, saute 1-2 mins. and add chopped tomato, cover cook till chicken is soft,add water if needed.And add garam masala and stir well.
•Lastly add the prepared greens paste to the chicken curry stir well for 2-3 mins.
•Remove from fire and transfer into a bowl to serve.

This dish tastes well when done using chicken with skin on.
Goes well with fried rice,pulao or just plain steamed white rice.
….Say Gongura….. I like it anyway….
