Biryani Rice

Ingredients

Onions – 2 medium
Green chilis – 2 slit
Fresh mint leaves – 1 cup chopped
Fresh Coriander leaves – 1 cup chopped
Bay leaves – 2
Cloves – 4
Cinnamon – 2′ stick
Pepper corns – 10-12
Curry leaves – few optional
Basmati rice or any of your choice – 4 cups
(I used Thai Rice)
Lemon – 1
Salt – as per taste
Oil – 4-5 tbsps

Method
1.Slice the onions finely and fry in oil till golden brown.Remove the pan along with the oil and onions and keep aside.
2.Place thick bottom cooking vessel on heat with water double the measure of rice and add salt,bay leaves,cloves,cinnamon and pepper.
3.Cover the vessel and bring to boil.At this stage add washed,soaked and drained rice stir well and cover cook till almost all the water is evaporated,lower the heat.
4.At this stage open the lid and sprinkle fresh mint and coriander leaves,lemon juice and fried onionalong with oil and few drops of food colour yellow in few points and orange in few points over the rice and cover and steam 5-10 mins on low.
5.Turn of heat and transfer to rice serving dish.Serve hot with Gongura chicken and raita or Bagara baingan (Gutti Vankaya Koora).
