GONGURA(Red Sorrel Leaves) CHUTNEY
•Fresh Gongura leaves – 1 big bunch
•Onion – 1 large roughly chopped
•Garlic pods – 2 sliced
•Fenugreek(methi seeds) – 1 tsp.
•Mustard – 1 tsp.
•Cumin/Jeera – 1 tsp.
•Dry chillies – 8-10
•Tamarind – 3 pieces each of 2 inches
*Ingrd. for tempering(talimpu)
•Oil – 3 tbsp
•Mustard – 1/2 tsp.
•Dry chilli – 2
•Curry leaf – 1 sprig
•Garlic – 2 pods crushed
•Heat a pan and add oil 1 tbsp., fry red chillies(8-10)-DO NOT BURN, in the same pan fry methi, jeera and mustard just till they change colour, remove and cool.Fry tamarind too as above.
•In a small blender jar blend the above ingredients into a smooth powder.
•In another pan, heat 1 tbsp. oil, add cleaned and chopped Gongura leaves, fry till they wilt.
•Add wilted gongura leaves to the above red chilli mix , blend coarsely, then add salt raw onion and garlice slices and run the blender once or twice ,remove into a serving bowl.
•Temper by heating 1-2 tbsp. oil, splutter mustard, dry chilli, curry leaves and crushed garlic, fry till good aroma fill your kitchen🙂..mix into the above blended gongura chutney ..mix well.
•Serve hot with plain rice and ghee or fried rice.
