Carrot Banana Cake.
Plain Flour (Maida) – 300 gms
Eggs – 3 medium
Bananas – 2 medium
Carrot – 180 gms Grated
Soft Light Brown Sugar – 180 gms
Sunflower oil – 180 ml
Baking powder – 1 tsp heaped
Vanilla essence – 4-5 drops
1.Preheat the oven to 180C.Grease a 24 cm round cake tin with oil and dust with flour and shake off exess flour and keep.
2.Sift the flour and baking powder into a large bowl.And in an other mixing bowl mix sugar,oil,eggs,masheg bananas and grated carrots beat well and add vanla and flour mixture and combine well and pour into the greased tin.
3.Place the cake tin in the peheated oven in the middle rack and bake 30-40 mins.
4.After 30 mins check with a skewer or sharp knife in the middle f the cake and if the skewer comes out dry its done.
5.Turn off the oven and remove the cake tin and let stand for 5-10 mins,then carefully remove cake and let cool on the wire rack.
This cake is a bit moist and very soft with banana flavour.Tastes good.
