Green Brinjal and Tomato Curry
Green Brinjals – 7-8 medium
Onion – 2 med
Tomato – 3 med
Salt – as per taste
Turmeric powder – 3 pinches
Red chili powder – 1 and 1/2 tsp
Coriander powder – 1 tsp
Oil – 4 tbsps
1.Chop brinjals into 1 inch cubes and place in salt water.Chop onions and tomatoes finely.
2.Heat oil in a pan and add chopped onions fry few mins and add drained brinjal pices stir well and add salt and turmeric powder combine well.
3.After 2-3 mins add red chili powder and coriander powder,mix well till nice aroma emanates,then add chopped tomatoes stir well and cover cook till soft and oil separates. Stir carefully to keep brinjal pieces in shape.
4.Turn off heat and serve hot with chappatis or rice.
Tasty and easy simple recipe with less ingredients.
