Potato Spinach Curry


Potato Spinach Curry


Potatoes – 2 med peeled and diced
Spinach – 1 cup chopped
Onions – 1 med
Tomato – 1 large
Mustard seeds – 1/2 tsp
Ginger garlic paste – 2 tsps
Turmeric powder – 3 pinches
Red chili powder – 1 tsp
Coriander powder – 1/2 tsp
Salt – as per taste
Oil – 3 tbsp
Garam masala – 1/2 tsp


1.Heat oil in a pan and add mustard seeds let splutter and add chopped onions and curry leaves fry few mins and add ginger garlic paste fry well till brown.
2.Add diced potatoes, turmeric powder and salt mix well and fry few more mins and add coriander and chili powder mix well ,stir on low heat .Sprinkle few tsps of water and cover cook for 5 mins.
3. Now add finely chopped tomatoes and garam masala give a quick stir and cover cook till soft add 1 cup water and washed and finely chopped spinach and cook till done.

Serve hot with chappatis.
