Mixed Veg Stir Fry


Cauliflower – 1 cup cut into bite size florets
Broccoli – 1 cup cut as above
Baby Carrots or normal carrots – peeled and cut 2 inch pieces
French beans – 1 cup chopped diagonally
Red onion – 1 large cut into dices
Garlic – 2 large pods minced
Salt – few pinches
Freshly ground pepper – 1/4 tsp
Extra virgin olive oil – 1 tsp


1.Prepare vegetables and wash,Boil enough water and add vegetables to the boiling water and few pinches of salt and par boil,that means boil 2 mins don’t cook fully and now remove from heat and drain and place under cold running water and keep aside.This retains the crunch in them.( This is called shocking the veggies)
2.Heat a large wok and add olive oil and fry minced garlic,then add diced onion and stir on high heat for few secs and add the par boiled veggies and stir fry.
3.Reduce heat and cover for 2 mins and again open lid and stir on high heat til edges become brown and lastly add pepper powder and a pinch of salt ,give it a nice stir and transfer into serving plate.

Serve hot ….They are good to have just like that or as you wish,or make chappati wraps with sour cream or mayo.
