Ingredients

Okra(Bendakayalu/Bhindi) – 500 gms sliced diagonally

Onion – 1 large sliced

Curry leaves – few

Green chilli – 2 slit

Salt – as per taste

Oil – 2 tbsps

For coconut powder

Fresh coconut grated – 1 cup

Garlic pods – 3-4 crushed

Salt – 1/2 tsp

Red chili powder – 1tsp

To prepare coconut powder dry roast the fresh coconut till slightly brown and cool,add salt,red chilli powder and garlic .now blend into coarse powder and store in an airtight container in the fridge for a week.If using Dry coconut it stays more than a month in the shelf.

Method

1.Heat oil in a kadai,fry onion,green chilli and curry leaves for 2 mins and add the sliced okra to the kadai stir fry for 5-8 mins,sprinkle salt and cover for 2 mins.

2.Open lid and stir few more mins and lastly sprinkle 2-3 tbsps of coconut powder and combine.
