Beetroot and Carrot Fry

Ingredients

Beetroots – 3 med peeled,washed and chopped into small cubes

Carrots – 2 med peeled,washed and chopped into small cubes

Curry leaves – few

Oil – 2 tsps

Turmeric powder – 1/8 tsp

Red chilli powder – 1/2 tsp

Salt – as per taste

Garlic – 2 pods grated

Method

Heat a pan and add oil to the pan and when hot enough drop the curry leaves and give it a stir and add the chopped beets ans carrots.

Saute for 3-4 mins and cover till the vegetable is cooked in its own steam,stir again for a couple of mins and sprinkle the garlic,turmeric, red chilli powder and salt ,combine well and fry 2-3 mins and remove into a serving platter.
