Mixed Veg Curry

Ingredients

Potatos – 2 med
Carrots – 2 med
French beans – 250 gms
Pumpkin – 1 cup ciced
Onion – 1 large
Tomato – 1 large
Ginger garlic paste – 1 tbsp
Red chili powder – 1 tsp
Turmeric powder – 2 pinches
Salt – as per taste
Garam masala – 1/2 tsp
Oil – 2 tbsp
Curry leaves few
Mustard seeds – 1/4 tsp
Water – 2 cups

Method

1.Peel wash and chop the potatoes,carrots and pumpkin and cut beans.Chop onion and tomatoes too.


2.Heat oil in a pan add mustard and chopped onion ,fry few mins and add ginger garlic paste fry till light brown.
3.Now add the chopped Vegetable pieces stir well and add salt,red chili and turmeric powders combine well fry 5-6 mins and add chopped tomato,curry leaves and garam masala cover cook till soft and add 2 cups of water and cover cook again till done.

Serve with chappatis or rice.
