White Brinjal ( Egg Plant ) Fry With Coconut Powder
White brinjals – 500 gms approx
Curry leaves – few
Salt – few pinches
Oil – 2 tsps
Turmeric powder – 3 pinches
Prepared coconut powder – 2-3 tbsps
Normally we can make this with dry coconut readily available in the market,somtimes it may not be fresh enough. So I dried the fresh coconut in my refrigerator…Just break open the whole fresh coconut and keep in the fridge door section for 2-3 days .Then grate,you get nice and soft curls,just add salt,red chili powder and garlic pods 2-3 and make coarse powder.
This Coconut powder can be used in fries or like chutney powder .
1.Wash and remove stems and chop the brinjals and place in salted water,to avoid discolouration.
2.Heat oil in the pan and add drained brinjal pieces, curry leaves, salt and turmeric powder and stir slowly for a few mins and cover cook 2-3 mins.
3.Then stir again and add the prepared coconut powder and saute for few more mins. Brinjals do not require more time to cook so see that it is done and turn of heat.
Goes well with rice as an accompaniment.
