Carrot Fry

 

Ingredients

Carrots – 3 peeled,washed and grated

Oil – 1 tsp

Mustard seeds – 1/4tsp

Green chilli – 2 slit and deseeded

Fresh ginger – 1 “pc peeled and minced

Curry leaves – few

Turmeric – 1/8 tsp

Salt

Kashmiri chilli powder – 1/4 tsp

For Garnish

Fresh coriander – 1 tbsp chopped

Cashews – few

Method

Heat a kadai or pan and drop oil  and fry cashews and keep aside.To the same oil add mustard and green chilli,ginger and curry leaves.

Fry few mins and add the grated carrots and stir 3 mins .Sprinkle chilli powder,turmeric and salt combine and cover on low,cook 3 mins and transfer into serving.

We can avoid chilli powder,but i used kashmiri chilli powder as it is mildly hot  and has good flavour.

Garnish with fresh coriander and cashews.Serve hot as you wish.
