Chocolate Vanilla Cake
This is my little son Kevin’s Favourite flavour….whenever he asks for a cake it would be Chocolate Vanilla Mix Cake!!!!He likes this with lots of icing…but here its a simple cake only.
Things you need are that of a basic vanilla cake….
Butter (Cooking Butter) -200gms
White Cooking Butter
Castor sugar/powdered sugar – 200gms
Eggs – 4 whole
Plain Flour/Maida – 200gms
Baking powder – 1 tsp
Baking soda – 1/4 tsp
Vanilla essence -1 tsp
Cocoa powder – 2 tbsps
Milk – 3 tbsps
In a mixing bowl take butter at room temperature and add the powdered sugar cream together till soft and add eggs one after the other and combine well…do not overbeat it may curdle….
Sieve the dry ingredients..plain flour,baking powder and baking soda and keep.
Mix cocoa powder in the milk and keep.
Now add the vanilla essence to the butter sugar mixture and fold in the dry ingredients and incorporate the air well into the batter by folding the flour only in one direction.
Divide the batter into two portions and in the second portion mix in the milk and cocoa mixture and combine well.
Preheat the oven to 180 degree C .
Grease the cake tin and dust with flour and pour in the vanilla batter first and then the chocolate cake batter over the vanilla and pass a knife over the batter.

Now place the cake tin in the middle rack and bake at 180 degrees C for about 25-30 mins as there is hollow in the middle.
When the cake tin is put upside down you get this wonderful chocolate vanilla mix cake…

You know what….this is the perfect Coffee Cake for Tea Time!!!!!!!This cake tastes better the day after you bake it…Very simple and easy….try out this and enjoy baking.
Things you need are
Cooking Butter(White Butter) -200 gms at room temperature.
Castor sugar or powdered sugar – 200 gms
Eggs whole – 4large
Plain flour/Maida – 200gms
Baking powder – 1 tsp
Baking soda – 1/8 tsp
Instant coffee powder – 2 tsps mix into 2tbsps of warm water
All you need to do first is sieve the dry ingredients ..plain flour,baking powder and baking soda and keep.
Take a mixing bowl drop in the butter and powdered sugar and cream well till soft,can use a normal whisk or hand mixer.
Add eggs one by one and whisk gently,pour in the coffee mixture and combine.
Lastly fold in the sieved dry ingredients and combine by folding technic to get the cake batter
Coffee Cake Batter
Now preheat the oven to 180 degrees .
Take a cake pan/tin and grease it with butter and dust flour and shake off the excess flour and pour in the cake batter into the cake tin.
Place the cake tin in the middle rack and bake for about 20-25 mins.
Check the cake after 15-20 mins with a skewer or skarp knife for doneness….the skewer should come out clean..if something is sticking …bake further a couple of mins till done.
Baked cake in the tin
When done remove and place to cool and turn upside down on to large platter.
Slice and serve as you wish.
Sandwich Bread Slices – 6
Pizza sauce or tomato ketchup – 4-5 tbsps
Mozzarella Cheese shredded – 1 cup
To prepare the vegetables for topping you need
Oil – 1tbsp
Sliced onion – 1 cup
Sliced carrot 1/2 cup
Green chilli – 1 minced
Spring onion – chopped 1/2 cup
Salt and Pepper for seasoning
First heat a pan and add oil saute the sliced onion,carrot,green chilli and white part of the spring onion fry well and season it with salt and pepper and take off the burner and keep.
Prepared veggies for topping
Take the bread slices and place them on the baking tray and spread sauce well,then spread the prepared veggies and remaining spring onion greens.
Now top with the Mozzarella Cheese
Place the baking tray under the grill in the oven as shown

Grill till the cheese melts and slightly browned..thats it..Easy Cheesy Vegetable Pizzas are ready to Gobble up.
If you do not have the grill oven can use your Microwave oven…But this takes 1-2 mins only and the cheese do not brown…only melts!!!!
Veg Bread Pizzas
Oven Roasted French Beans and Potatoes with Garlic and Chilli Flakes
This is another Roasted Vegetable Dish…Prepared using French Beans,Potatoes,Garlic,Chilli Flakes and Olive Oil..This is simple and baking is fun…ofcourse Baking is Roasting ..Roasting is Baking…Because We use the Same Oven,Same Settings,Same Dishes or Trays but only thing is while baking we do not stir or disturb the dish whereas While Roasting We can stir or turn the things that are Roasted and Browned…..
Thing needed for this dish are
French Beans – As many as you wish…I used approx 500gms
Potatoes 2-3 med peeled and washed.
Garlic pods – 2 big grated
Red Chilli flakes – 1 tsp
Black Pepper powder – 1/2 tsp freshly ground
Salt to taste
Extra Virgin Olive Oil – 2 tbsps
Prepare vegetables by cutting beans into 2” pieces diagonally or as you like after removing edges and washing and cut potatoes into wedges.
Place them in the Baking Tray or You can use Pyrex Glass Dish.
Veggies in the Roasting Tray.
Now sprinkle chilli flakes and grated garlic over the veggies.

Drizzle olive oil and add salt and toss well.
Pre-heat oven to 240 degrees C and place the Tray in the Bottom rack of the oven and Bake (Roast)..Stir every 5-10 mins till browned on all sides Take care while stirring as the oven is hot Use the mitten and long spatula. Sprinkle pepper powder just before you remove out of the oven and stir.
LIGHT CHOCOLATE CAKE.
•All purpose flour or plain flour(maida) – 150 gms
•Butter – 150 gms
•Powdered sugar or castor sugar – 150 gms
•Eggs – 3 large
•Baking powder – 1 tbsp
•Vanilla essence – 1 tsp
•Cocoa powder – 1 tbsp
1.Weigh the butter and cut into small cubes and let the butter come to room temperature.
2.Blend the sugar to prepare castor sugar and keep aside.
3.Sieve flour,baking powder and cocoa powder together to get well mixed keep these dry ingredients aside.
4.Now take a big mixing bowl and beat butter and sugar powder until creamy and eggs one by one and continue beating add vanilla essence and mix well.
5.Remove the hand mixer and fold in the dry ingredients just see u mix them well together .
6.Grease the baking tin well with butter and dust flour over it and shake off exess flour.
7.Pour the prepared cake batter into the tin see that there is not much in the centre level with spatula.
8.Preheat the oven to 180 degrees and place the cake tin in the middle rack.
9.Bake it for about 30-40 mins.We can check after 25 min by opening the oven door and inserting a wooden skewer or sharp knife the skewer should come out clean and dry,if any batter sticks to it close door and continue baking for another few minutes.
10. Take care while doing this cause everything will be hot.When done remove and let it become warm before you turn the cake. cool over a wire rack.

These Brownies are rich in chocolate and no nuts,we can add walnuts,almonds or hazelnuts to this recipe to have a different taste of a nutty brownie.
Things you need
Dark Cooking Chocolate – 100 gms
Unsalted Butter – 100gms cut into cubes
Vanilla Essence – 1/2 tsp
Salt – 1/8 tsp
Sugar – 2/3 cup Powdered
All purpose flour (Maida) – 2/3 cup
Baking Powder – 1/4 tsp
Eggs – 2 whole
Take a Stainless steel bowl and place the broken pieces of dark chocolate and butter cubes in it.
Place another vessel of water to boil and as it starts to boil,carefully keep this bowl of butter and chocolate over that and melt while stirring.Or use double boiler.
Chocolate is not to be melted on direct heat or flame
After melting keep aside,and take a mixing bowl and pour the mixture into it,then add salt,sugar and eggs and beat well,add vanilla essence too.
To this add the flour and baking powder and mix well.
Grease a square or rectangular Pyrex glass baking dish or cake tin and pour into it.
Preheat oven to 180 C and place in the middle rack and bake for 20 – 25 mins.As usual check with a skewer or sharp knife by inserting in the middle and it should come out clean.
Turn off the Oven and remove the dish using oven mitten and allow to cool and cut into Squares.
Rich chocolate Brownies are Ready to serve…But they taste better the next day…..So Wait to get the original taste of this Brownies…

Chocolate Cake Bars
Plain Flour – 300 gms
Soft Light Brown Sugar – 175 gms
Eggs – 3 whole
Sunflower oil – 180 ml
Cocoa powder – 2 tbsps mixed in 3 tbsps of boiling water
Baking powder – 1 1/2 tsp
Plain chocolate – 50 gms chopped
Oil for greasing – few drops
1.Grease a 20.5 cm square tin or a rectangular one and dust it with flour,remove exess flour by shaking off.
2.Preheat oven to 180 C .
3.Sift flour and baking powder and keep.
4. In a mixing bowl take the cocoa powder and add boiling water and mix well then add oil and brown sugar and whisk well to mix and add eggs beat well to combine.
5.Now add the dry ingredients that is the sifted flour and baking powder mix to the wet ingredients combine well with the spatula,add chopped plain chocolate and pour into the greased tin,spread equally and place in the middle rack of the oven.
6.Bake for 30-40 min,If you use a rectangular tin and spread the batter in thin layer it bakes more faster it takes only 20-25 mins,but always check for doneness with the skewer in the middle of the cake,If the skewer comes out clean it is done .
7.Remove and cool,keep covered in a foil overnight.This is so soft and chocolaty.Cut into bars and serve.
NO ESSENCE ….NO BUTTER….STILL SMELLS GOOD.
