Egg Scramble with Tomato

Egg sramble with Tomato

 Ingredients

Eggs – 3

Onion – 2 finely chopped

Tomato – finely chopped

Curry  leaves – few

Salt to taste

Red chilli powder – 1 tsp

Turmeric powder – 2 pinches

Oil – 3 tsps

Method

Heat a pan and add oil,drop in the onions and curry leaves fry well till slightly brown and sprinkle Turmeric, salt and red chilli powder and stir well.

Add the chopped tomato and continue stiring and do till oil seperates,now add eggs and leave a min and stir till it becomes scrambled well for about 3-4 mins and turn off heat.

Tastes good with chappatis or parathas or frozen chappatis(To be cooked on tawa ,No need to thaw)

We can add any greens,peas or potatoes and garam masala if desired to this scramble to have a different taste.Try and experiment you’ll love .

Serve in wraps or with toasted bread for kids meal.

Aubergine Spring onion and Egg Fry

Aubergine Spring onion and Egg Fry

 

Aubergines(Purple ones) – med 4-5 thinly sliced and placed in salt water

Onion – 1 large  finely chopped

Green chilli – 1 sliced

Curry leaves – few

Fresh coriander – a handful chopped

Spring Onion – a small bunch sliced

Eggs – 3

Oil – 2 tbsps

Red chilli powder – 1/6 tsp

Turmeric powder – 1/8 tsp

Coriander powder – 1/6 tsp

Salt – to taste

Method

Heat a pan and add oil,drop in the onions,green chilli and curry leaves and sauté well,now add the sliced aubergines,little salt and turmeric powder and stir to coat well.

Cover 2 mins and now  sprinkle red chilli powder and coriander powder and stir.Use chilli according to your family tastes.

Crack the eggs and stir in the sliced spring onion and chopped fresh coriander and stir fry 3 mins and turn off heat.

Crack the Eggs over the Fried Aubergines

Serve hot with Rice or Chappatis.

Easy Onion cilantro Pan Frittata(Omelette)

Onion Cilantro Frittata

This frittata is so easy and I completely made on the stove top,No need of oven you can make it this way when not using cheese.

Ingredients

Eggs – 3

Onion – 1 large sliced finely

Salt

Cilantro/Fresh coriander – a handful

Turmeric powder – 1/8 tsp

Red chilli powder – 1/4 tsp

Oil – 2 tsps

Method

Heat  a small medium shallow pan and add oil,fry sliced onions till light brown and sprinkle red chilli and turmeric powders and add salt stir well a min.

Crack eggs into the pan and combine, lower heat and cover the lid for 2-3 mins .

Open lid and sprinkle fresh cilantro and lightly scrape sides and gently turn the frittata and let brown the other side for 2 mins and flip into a platter, cut into quarters and serve in sandwiches or can have as it is .serves 2.

Serve hot.

Scrambled Eggs with Tandoori Masala

Ingredients

Eggs – 4

Onion – 2 big finely chopped

Oil – 3 tbsps

Turmeric powder – a pinch

salt to taste

Tandoori masala – 1/6 tsp

Red Chilli powder – 1/4 tsp

Method

Crack eggs into a bowl and beat slightly.

Heat a pan and add oil to it as it gets heated add the onions and fry well till light brown.

Now sprinkle turmeric powder,red chili powder and stir a min,then add the beaten eggs and salt stir well to get cooked and scrambled and lastly sprinkle the tandoori masala and stir fry till done and remove into a dish.

Serve hot garnished with cilantro and red peppers.

Egg Omellete

Egg Omelette

Eggs – 3 large
Salt – 2 pinches
Red chili powder – 1/4 tsp
Water – 1 tsp
Oil – 2 tsp

Method

In a mixing bowl take 1 tsp water and add salt and red chili powder to it and mix well with the fork,Crack eggs into this mixture and beat till you get bubbles.

Before you start doing this keep a fry pan on low heat ,so you don’t need to wait after beating the eggs.

Now spread oil all over the pan and increase the heat and pour the egg mixture enough for making your required size of omelette,when it gets fried on one side turn to the other side and cover with a lid for 3-4 secs and remove from the pan.you get Fluffy omelettes .

Serve Immediately. or place them in chappatis and roll to pack lunch for kids.You can see this rolls in the other picture.

Egg Potato Scramble

 

EGG POTATO SCRAMBLE

Ingredients:

•Eggs – 4 whole
•Potatoes – 2 Medium
•Onions – 2 Large
•Oil – 2 tbsp.
•Salt
•Red chilli powder – 1 tsp.
•Turmeric – 1/4 tsp.

Method:

•Prepare potatoes by peeling, washing and grating. Keep the grated potatoes aside.
•Chop onions finely.
•Heat a wok or pan and add oil. and onion, saute for 2 mins. add grated potatoes and stir continuously, and as it starts to stick together, sprinkle salt and tumeric and stir fry, and as the potatoes start to turn slightly brown add chilli powder and eggs 1 by 1. Stir till it gets srambled well.Turn off flame.
•Remove into a serving bowl.
•You can serve with chappati’s, rice or you can make a sandwich filling or mix it with a leftover rice to make an another tasty dish as a variation.

Boiled Eggs Fry

 

Boiled Eggs fry

Ingredients
Eggs – 6
Onion – 2 large
Oil – 1 tbsp
Salt
Turmeric powder – 2 pinches
Red chili powder – 1/4 tsp
Freshly ground pepper – 1/2 tsp

Method
1.Boil eggs,cool and remove shells set apart.
2.Heat a shallow pan,add oil and roughly chopped onions.Stir fry for few mins then add salt,turmeric and chili powder mix well
3. Now add Boiled eggs and crushed pepper toss well to coat for a couple of mins. turn of the heat.

Serve hot as you wish.
