Easy Onion cilantro Pan Frittata(Omelette)

Onion Cilantro Frittata

This frittata is so easy and I completely made on the stove top,No need of oven you can make it this way when not using cheese.


Eggs – 3

Onion – 1 large sliced finely


Cilantro/Fresh coriander – a handful

Turmeric powder – 1/8 tsp

Red chilli powder – 1/4 tsp

Oil – 2 tsps


Heat  a small medium shallow pan and add oil,fry sliced onions till light brown and sprinkle red chilli and turmeric powders and add salt stir well a min.

Crack eggs into the pan and combine, lower heat and cover the lid for 2-3 mins .

Open lid and sprinkle fresh cilantro and lightly scrape sides and gently turn the frittata and let brown the other side for 2 mins and flip into a platter, cut into quarters and serve in sandwiches or can have as it is .serves 2.

Serve hot.

Potato and Bell Peppers Frittata

Potato Bell Peppers Frittata

To briefly explain...Frittata is an Italian Word for Omelette and are prepared differently,Usually starting on the stovetop and finishing in the Oven.This is a popular Method of Preparation.

These Frittatas  can be prepared in many different variations using different combinations of meat,cheese and vegetables.Where Eggs are the Base.

Frittatas are great for breakfast,lunch,brunch or Dinner,They are soo filling and can be served hot,warm or even cold and perfect for any occation.

To prepare this Dish all you need is an Oven proof  Skillet either castiron or stainless steel or even non stick with little raised edges for a thicker Frittata…and the gas oven with the overhead Grill (Broiler) as it is called in US and Canada.

The Gas Oven has the heat source above and below,when the heat source for grilling comes from above ,Grilling is termed as Broiling.

While preparing this dish we place the Broil pan or Grill pan under the upper heating element,Lower heating element need not be ON,we only use this before to pre-heat the oven.While grilling keep the oven door partially open.

This grilling gives the dish a firm and nice browning on the top.

To prepare the Potato and  Bell Peppers Frittata we need



Eggs – 6-8

Potatoes – 2 medium boiled,peeled and sliced into roundels

Onion – 1 large thinly sliced

Garlic cloves – 2 grated

Bell peppers (Red,Yellow and Orange) – 1/4 of each chopped into very small cubes

Butter or Olive Oil – 2 tbsps

Tomato – 1 thinly sliced

Fresh mint and Cilantro(Coriander) – finely chopped a hanful

Salt and Pepper for Seasoning

Method for Preparation

Boil Potatoes in enough water till al dente but not mushy and drain and peel slice into thick discs.

Place the Ovenproof Grill pan on the stove and Drizzle Olive Oil or Butter or Mix both and heat,Saute garlic and onion till transluscent and add bell peppers and stir 2-3 mins remove and keep in the same pan place the boiled potato slices and slightly brown both sides.

Meanwhile Beat Eggs well and add salt,pepper and chopped herbs(Mint and Cilantro) and mix well ,Pour over the potatoes and sprinklr onion,bellpeppers and garlic mix and place tomato Slices on top and cook on low heat till set.

As it is setting on the stove Top Pre-heat the Oven to 200 c and place the frittata pan in the oven.Now Turn OFF the Below Heat Source and TURN ON the Grill (Broiler) on the upper side of the oven so that the frittata gets nicely Browned on Top and If You Use the Cheese it gets melted and Browned.Keep the Oven Door partially Open.

Just Out From the Oven

I have Avoided the Cheese in my Recipe here..This is a Cheeseless Frittata.Tastes good with the flavour of fresh herbs and Filling.


We can Use Cream Cheese cubes or Parmesan and Mozzarella cheese to top before placing under the Grill.
