Butterfly Prawns in Garlicky Butter

This is a tasty and easy to prepare seafood recipe,only effort is to prepare prawns into the desired shape.This can be served as a starter or in maincourse with any fried rice  with saucy curry or raitha and salad.using butter enhances the taste of this dish.
 
Ingredients
 
Jumbo Prawns – 10-12
Butter – 1 stick
Garlic cloves – 2 big grated
Fresh red chilli – 1 chopped
Salt and Pepper – for seasoning
 

Grated garlic and Chopped fresh red chilli

 
Preparation
Clean the prawns,by removing shell and keep the tail intact,devein on both sides bottom and on top,the top one is the digestive system which is to be completely removed,wash well and then slightly slit in the centre  to widen the prawn and make a small incision  in the middle and bring out the tail portion up as shown.
Sprinkle salt and pepper powder and keep.

 Method

Heat up a pan and add butter as it starts to melt,add the grared garlic and chopped red chilli and saute 2 mins and place the tail side down of the prawns on the pan fry for 4-5 mins on each side and they are done.that’s it…

Remove the prawns on to a platter,deglaze the pan by just a sprinkle of a tsp of water and pour it over the prawns,by deglazing you get all the goodness of the fried garlicky butter on to your Butterfly Prawns.

Serve with Garlic pilaf .

 Garlic Pilaf is easy to prepare Rice dish,Just cool the cooked white rice and keep.

Then heat a wok and add oil,add  finely minced garlic cloves and finely chopped onion and saute till slightly transluscent and add finely chopped chives or spring onion,sprinkle salt and pepper and turn off heat.add the cooked and cooled rice and combine well.garlic pilaf is ready to go.

Easy Fish Fry

Fish Fry with Onion Salad

Ingredients

King fish slices or fillets – 5-6 pcs

Red chilli powder

Turmeric powder

Salt as per taste

Pepper powder freshly ground

Oil – for shallow fry

For salad and Garnish

Red onion – 1 med and 1 large sliced onto rings

Carrot – 1 peel wash and use a 5 hole zester to get thin strips

Cucumber – 1 wash and do the same as carrot for thin strips

red chilli powder  – little to sprinkle

Mint leaves

Lemon Zest

Use the med onion rings,lemon zest and mint leaves for garnish.

Serving with Onion rings and lemon Zest

Mix the large onion rings with red chilli powder and top with carrot and cucumber strips for salad.

Fish fry with salad

For Fish Fry

Wash the fish pieces and pat dry ,just add all the ingredients and rub onto the fish pieces and keep for an hour and shallow fry.

Alter the ingredients according to your taste.

This is an easy way to fry fish,We can also add red chilli paste and ginger garlic paste to get more spicy one.Cooking is all fun and creative adding this and that and creating new dishes.

Andhra Prawn Masala

 

This is the best and tastiest dish of prawns I’ve ever made or had…You Gotta try this…

Ingredients

Tiger Prawns – cleaned and deveined – 400gms

Onions  – 2 large

Green chilli – 3

Ginger garlic paste – 2 tbsps

Turmeric powder – 4 pinches

Red chilli powder – 1 tsp

Salt – as per taste

Oil – 2 tbsps

Black pepper – 1/2 tsp freshly ground

Curry leaves – 2 sprigs

 

Method

Always clean and devein the prawns well before any dish preparation.

1.Prepare paste with onion,greenchilli and ginger garlic together and keep.

2.Heat a large wok and fry this paste with 1 tbsp of oil and remove  and keep when it turns slightly brown.

3.To the same pan add the remaining oil and throw in the curry leaves  and cleaned and drained prawns and stir well on medium to high heat..till the liquid evaporates.

4.Now add salt, turmeric and red chilli  powders,stir for 2-3 mins,now add the fried onion masala paste and give it a nice stir now add 1/4 cup of water and cover till the prawns are done.

5. Open the lid and sprinkle freshly ground pepper and stir for 1-2 mins and transfer into a serving dish.

Serve hot .


Fish Fry With Pepper

 

Fish Fry With Pepper.

Ingredients

King Fish (Vanjaram) – 6-7 slices
Salt – to taste
Freshly ground Pepper – 1 tsp
Corn flour – 2 tsps
Oil for shallow fry – 3-4 tbsps

Onions and Cucumber slices to garnish.

Method

Wash and pat dry the fish slices and place on a platter.sprinkle salt and pepper and rub well to coat on both sides.

Then sprinkle corn flour and pat well keep for 10-20 mins covered in a refrigerator.

Now Heat a flat Tawa and sprinkle oil and place the fish slices and fry7 mins on each side.Turning Only Once.

Serve with Rice and dal or can have just as an appetizer.
Along with onion and cucumber salad and lemon wedges.

Fish And Okra in Dark Onion Tamarind Gravy.

 

Fish and Okra in Dark Onion Tamarid Gravy.

Ingredients

Fish – Any Fresh and firm fish -7-8 pieces
White onion – 2 large finely chopped
Tomato – 1 large finely chopped
Curry Leaves – few
Green chili – 4 slit
Okra (Bendakai) – 10 small and whole edges removed
Ginger garlic paste – 2 tbsps
Turmeric powder – 1/4 tsp
Red chili powder – 1 tsp
Coriander powder – 2 tsp
Salt – as per taste
Tamarind – of 1 lemon size extract pulp
Oil – 3 tbsp
Fresh coriander – few sprigs chopped

Preparation

Clean and wash fish pieces and keep covered.

Heat a large wok and add oil ,then add the chopped onion and fry well till light brown,now add the ginger garlic paste and fry well till both becomes almost dark brown but not burnt….

Lower heat and add the powder spices and give it a stir and add chopped tomatoes,salt and little water and cover the wok for 3 mins.

As the tomato softens ,mix well and pour the tamarind pulp, and water about 3 cups and bring to boil,as the gravy boils drop the fish pieces,groon chili,curry leaves and okra whole ad cover cook for 5-8 mins.You get a nice aroma of chili and okra as it boils and blends with fish….Need to try to get to smell this flavour…

Turn of heat and sprinkle fresh coriander.

Serve with Hot Rice.

Fish In Gongura Curry

 

Fish In Gongura Curry

Ingredients

To prepare Gongura (Red Sorrel Leaves) , First we need
Gongura Leaves – 1 bunch
Onions – 2 medium chopped
Tomato – 1 med chopped
Green chilis – 6-7 chopped
Salt
Turmeric – 1/4 tsp
Coriander powder – 1/2 tsp

Wash the leaves and cook along with the other ingredients adding 1/4 cup of water till done.Mash and keep.

To prepare Fish

Fish – 250 gms
Oil – 4 tbsps
Onion – 1 finely chopped
Garlic – 3 pods crushed
Curry leaves – 1 sprig
Dry chilis – 2 broken
Mustard seeds – 1 tsp
Methi seeds – 1/2 tsp
Pepper corns – 1/2 tsp
Cloves – 2
Cinnamon – 1/2 inch piece
Red chili powder – 1/8 tsp
Turmeric – 1/8 tsp
Tamarind pulp – 2 tsps
Fresh Coriander – 1/2 cup chopped

1.Take Fish Fillet of your choice and cut into 1 or 2 inch cubes wash and sprinkle salt,red chili powder and a pinch of turmeric powder and mix well.
2.Powder pepper,cloves and cinnamon.
3.Heat a pan and add oil,then splutter mustard and add methi seeds
to this add crushed garlic and onion chopped and fry few mins,then add curry leaves and dry chilis.
4.Now add the fish pieces and toss slowly then add the pepper clove powder and tamarind pulp cook covered for 6-7 mins tossing gently.
5. Now lower heat and add the prepared gongura paste to the fish curry,Adjust salt and add finely chopped fresh coriander and mix well but carefully not to brek the fish pieces.Turn of heat.

Serve with white rice.

I have never seen or tasted this recipe anywhere till now so thought of trying this combination and it turned out so well and tasty.

I heard and had mutton gongra,chicken gongura,prawns gongura and many other chutneys but FISH GONGURA is Unique in its own taste……..TRY AND SEE..

White Fish Fry

Ingredients

White fish -6-7 slices
Red chili powder – 1 tsp
Salt – to taste
Black pepper powder – 1 tsp
Red chili paste – 1 tsp
Oil – 2-3 tbsps

Method
1.Clean and wash the fresh white fish pieces and pat dry with kitchen towels.
2.Place in a flat dish and apply salt,pepper,red chili paste and powder and keep for 20-30 mins covered in a refrigerator.
3.Heat oil in a shallow pan and shallow fry for 7-8 mins on each side turning only once.

This is a kind of shallow water fish and tender,cooks faster and tastes good.Has only a large single middle bone and big eyes…Called Vellipara in malayalam.

Serve hot for better taste with onion salad.
