Carrot and French Beans with Garlic and Pepper


These carrots and beans are steamed and then stir fried with grated garlic and freshly ground pepper.

Things you need

Carrots – 2 peeled washed and cut into long and diagonally.

French beans – cut edges wash and chop into half

Garlic – 2 pods grated

Black pepper – 1/2 tsp freshly ground.

Salt – as per taste


Steam the carrots and beans in a steamer till cooked but still crunchy.


Now heat a pan and add a teaspoon of oil,add grated garlic and fry a min ,then throw in the steamed veggies.

Stir fry on high heat for a couple of mins and sprinkle the black pepper and stir well and serve hot.



Mixed Vegetable Stir Fry


Mixed Veg Stir Fry


Cauliflower – 1 cup cut into bite size florets
Broccoli – 1 cup cut as above
Baby Carrots or normal carrots – peeled and cut 2 inch pieces
French beans – 1 cup chopped diagonally
Red onion – 1 large cut into dices
Garlic – 2 large pods minced
Salt – few pinches
Freshly ground pepper – 1/4 tsp
Extra virgin olive oil – 1 tsp


1.Prepare vegetables and wash,Boil enough water and add vegetables to the boiling water and few pinches of salt and par boil,that means boil 2 mins don’t cook fully and now remove from heat and drain and place under cold running water and keep aside.This retains the crunch in them.( This is called shocking the veggies)
2.Heat a large wok and add olive oil and fry minced garlic,then add diced onion and stir on high heat for few secs and add the par boiled veggies and stir fry.
3.Reduce heat and cover for 2 mins and again open lid and stir on high heat til edges become brown and lastly add pepper powder and a pinch of salt ,give it a nice stir and transfer into serving plate.

Serve hot ….They are good to have just like that or as you wish,or make chappati wraps with sour cream or mayo.


Yam Stir Fry




•Yam – 1/2 kg chunk
•Oil – 1 tbsp.
•Chilli powder – 1 tsp.
•Garlic pods – 2 grated (optional)


•Peel the skin of the yam chunk. then wash, pat dry with kitchen towel, cut into finger strips.
•Place wok on the flame, add oil, heat 1-2 mins. add the strips of yam, toss well till they turn crispy.
•Lastly add salt and chilli powder, and garlic if you wish, toss well to coat for 2-3 mins.
•Turn of the flame , serve hot.

Potato Wedges

Potato Wedges


Potatoes – 2 medium
Oil – 2 tsps
Red chili powder – 1/4 tsp
Turmeric powder – 2 pinches
Salt – to taste


1.Just scrub the surface of potatoes to clean of any mud and wash under running water and wipe with a clean cloth.
2.Cut the potatoes into wedges as shown.
3.Heat the pan add oil and potatoes start to stir till they turn light brown.If they are hard still cover and keep on low heat for a couple of mins stirring in between.
4.Lastly sprinkle salt, red chili powder,turmeric and toss well.Turn of heat and Transfer to a serving dish.

For a variation you can add Freshly ground pepper and crushed garlic.This too is good to taste with pepper and garlic aroma.

Serve hot as an accompaniment.

Chicken Sausage and Mixed Vegetable Stir Fry

Chicken sausages with Mix Diced Veggies


Frozen chicken sausages -1 pack (approx-10)
Green Capsicum – 1
Onion – 1 large
Carrot – 1 large
Cabbage – few separate leaves
Garlic – 2 pods Minced
Tomato Ketchup – 2 tbsps
Red chili paste – 1/2tsp
Salt – 1 pinch
Black pepper – 1/4 tsp
Red chili powder – 1 pinch


1.Slice the sausages,and fry in a tsp of oil stirring well for few mins till they change colour remove and set apart.
2.Wash and Dice all the veggetables as shown.
3.Heat a wok add oil or use the same pan you fried the sausages and add minced garlic along wiyh the diced veggies and stir fry on high heat for 2-3 mins.
4.Sprinkle a few tsps of water and cover cook .When still crunchy add the fried sausages and salt red chili powder toss well.
5 Lastly add tomato ketchup and red chili paste and pepper powder mix well to coat add few more drops of water and stir well for 2-3 mins and turn of heat.

I use this to to make wraps with Arabic bread (Khubz) or filling sandwiches along with salad, mayonaise and ketchup.

Raw Banana Stir Fry

Raw Banana Stir fry


Raw bananas – 4
Oil – 2 tsps
Turmeric powder – 2 pinches
Red chili powder – 1/2 tsp
Salt – to taste
Mustard seeds – 2 pinches
Curry leaves – few


1.Take water in a big bowl and add little salt and turmeric mix well and keep.Now peel the babanas and slice into roundels 1/2 cm thick and drop into salt and turmeric water.
2.Heat the wok or kadai add oil and splutter mustard seeds and add curry leaves,drain the water completely and add the banana pieces to the pan and stir well on medium heat.
3.Continue stiring till light brown and sprinkle salt and red chili powder toss well and turn off heat.

Serve hot with along with rice and dal or rasam.
