Tindly or Dondakayalu as said in telugu is one of the humble vegetable available through out the year.This veggy is very tasty when fried or as curry..you can find many recipes in my blog…in chutneys and stuffed curry style….try out this recipe….I would like to call as Tindly – 65 too…!!!

Ingredients

Tindly – 250 gms

Plain flour/maida – 1/2 cup

Cornflour – 1/4 cup

Ginger garlic paste -1 tsp

Salt as per taste

Chilli powder – 1 tsp

Turmeric/Haldi – 1 pinch

Water to mix the above ingredients – 2-3 tbsps

Oil – for deep fry

Method

First wash the tindly pat dry and trim edges,then slice into thin long strips as shown

Take a mixing bowl drop in all the mentioned ingredients except oil and mix well to coat well,keep for about 10-15 mins.

Place a wok and add oil for deep fry,Heat the oil and drop the marinated veggies into the oil ashow you fry dumplings or pakoras.Do not drop in lumps but sprinkle in a single layer.

Fry well till golden brown and done.

Serve hot as a side dish with any meal.You can even serve as a delicious snack…

Cauliflower Crisps

Ingredients

Cauliflower florets of 1 cauliflower

For Batter

Corn flour – 5-6 tbsps

Plain flour/Maida – 1/2 cup

Salt to taste

Pepper powder – 1/4tsp

Red chilli powder/Cayenne – 1/2 tsp

Ginger garlic paste – 1/4tsp

Water to mix – 1/4 cup

Need oil for deep fry

Method

1.Prepare cauliflower into florets and wash.

2.Heat a vessel with enough water and add a tsp of salt and parboil cauliflower florets for 3-4 mins and drain.

3. prepare batter and add the florets to the batter and let coat well .

4. Heat oil in a pan and drop the cauliflower florets one by one,fry in batches.Do not crowd altogether to avoid sticking together.

5. Fry till golden brown and drain onto paper towels.

Serve hot if you like more crispy or keep covered to have soft ones

Serve with your favourite lunch or dinner as side dish or as appetizers….prepare this dish as its the highly available season of cauliflowers.

 Ingredients

Cabbage – a quarter,shredded and rinsed

Onion – 1 sliced

Green chilli – 3 sliced

Ginger garlic paste – 1tsp

Curry leaves – few

Turmeric powder – 3 pinches

Salt to taste

Oil – 3 tsps

Mustard – 1/4 tsp

 Fresh coconut grated – 1/2 cup

Fresh coriander 1 tbsp chopped

Method

Heat oil in a kadai and splutter mustard and then add onion,green chilli and curry leaves fry few mins and add 1 tsp of ginger garlic paste and fry.

Now add the shredded cabbage and fry till it reduces and turns transperant,add the turmeric,salt and fresh coconut and mix well.

Cover and cook till done.Add fresh coriander and serve.

Bhindi Fry (Okra Fry)

This is the easy and quick recipe and at the same time tasty side dish. IngredientsBhindi/Okra/Bendakayalu – 1/2 kg wash,wipe dry and trim edges and chop or use the frozen onesOnion – 1 choppedCurry leaves – fewOil – 2-3 tspRed chilli powder – 1/2 tspTurmeric – few pinchesSalt to taste MethodHeat a kadai or a shallow pan and add oil,As it gets heated drop in the onions and fry 3 mins,add the chopped bhindi/okra and fry stirring  till they get well seperated,add curry leaves and powder spices and salt. Stir fry till done and serve with you choice of menu.The easy and best vegetarian side dish.

 Ingredients

Spinach/Palakura – 1 bunch.washed and chopped leaves

Potato – 3 med peeled and cubed

Onion – 1 finely chopped

Green chilli – 2-3 sliced

Cumin/jeera –  1/2 tsp

Oil – 2 tsps

Salt – to taste

Turmeric powder – 1/6 tsp

Chaat masala – 1/2tsp

Method

Heat oil in a pan,drop in the cumin seeds and then green chillies and onions and fry 3-4 mins and add potato cubes stir fry on high for few secs and then on med heat till crust forms on potatoes and centre is cooked.

Add the turmeric powder and spinach and stir fry add salt and chaat masala and combine .

Turn of heat and Serve Hot,Goes well with Chappatis or Rotis.

 Ingredients for Crispy Vegetables

Step -1 Prepare vegetables

Mushrooms – Button mushrooms 8-10 peeled,washed and sliced

Bell peppers Yellow,red and Green – 1/2 each deseeded and diced

Carrot – 1 peeled,washed and thinly sliced into squares

Cabbage – 3-4 leaves diced

Prepared vegetables

 

step – 2  Prepare batter

Corn flour – 3 tbsps

Plain flour/All purpose flour – 5-6 tbsps

Salt and Pepper

Water – for mixing

Mix all the ingredients and prepare batter,add the vegetables and gently mix to coat well and keep apart.

 Step – 3 Deep Fry

Crispy Fried Vegetables

 Step – 4 Prepare Hot Sauce

Onion – 1 finely chopped

Ginger – 1 ” piece finely minced

Garlic Cloves 3 minced

Spring onion – sliced

Soy sauce – 2 tbsps

Red chilli paste – 1 tsp

Chilli sauce – 2 tsps

Salt to taste

Method

Heat a pan and add 2 tsp of oil from the fried veggies and stir fry ginger,garlic and onion on high heat for few mins and reduce heat,add the red chilli paste and sauces and stir a couple of mins.

Add the fried veggies and spring onion and a sprinkle of salt is optional as there is salt in sauces.

Stir fry 3-4 mins and turn of heat.Sprinkle chopped spring onion greens.

These Tasty and spicy Hot vegetables are good for wraps or with rotis or parathas.

These are easy homemade crisps/chips ,no preservatives added.

Just use as many potatoes  as you wish according to your requirement.

Method

Wash the potatoes well,no need to peel slice into thin slices  with a slicer and place in a bowl of water with a tsp of salt for 15 – 20 mins.

Remove the potato slices from water and pat dry on a clean cloth on both sides.

Potato Chips Ready to be fried

Heat oil for deep frying and fry the slices till crisp and drain on paper towels.

Transfer in to a large bowl and sprinkle chat masala for taste. If soaked in salt water no need to add salt again.

Enjoy the homemade crisps/chips just the way you like it….As snack or side dish .
