Boiled Egg and Fried Okra Sambhar


Toor dal (Kandi Pappu) – 1 cup
Eggs – 5 eggs Boiled and shelled
Red tender raddishes – 6 just scrub and cut into four pieces each
Carrot – 2 med peeled and chopped into bite size pieces
French Beans – few chopped into long pieces
Okra ( Bhindi / Bendakai) – as many as you wish or 10 remove edges and wash wipe and cut as shown.
Tomato – 1 large chopped
Onion – 1 large chopped
Curry leaves – 2 sprigs
Turmeric powder – 2 pinches
Red chili powder – 1 tsp or less
Coriander Powder – 1 tsp
Salt as per taste
Oil – 1 tbsp
Mustard seeds – 1/2 tsp
Dry chilis – few small round ones
Garlic – 2 pods crushed


1.Wash and boil the toor daal in the pressure cooker with few drops of oil and open and add chopped onion,tomato,carrots,red raddishes, beans ,few curry leaves,turmeric,chili powder,coriander powder ,salt and little more water and cover and cook again for 5-6 mins.
2. By the time prepare eggs and fry okra in few drops of oil in a small pan till light brown and keep.
3.When daal is done open lid and mix in the boiled eggs and fried okra to the sambhar and mix well , to adjust consistency add more water and salt and boil for few more mins.
4.Heat a small pan and prepare tempering or tadka with dry chilis,mustard,curry leaves and garlic and pour over cooked sambhar.

Serve Hot with Rice and Pappads.

As I was Running out of time I just added this eggs to this Sambhar and it was tasty so got this added to my recipes.
