Egg Pulusu (Boiled Egg Tangy Gravy)
Eggs – 7 boiled and shelled and cut around as shown
Oil – 3-4 tbsp
Onions – 4-5 finely sliced
Ginger garlic paste – 2 tsps
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Turmeric – 1/4 tsp
Garam masala – 1 tsp
Salt – as per taste
Pepper – 1/2tsp
Tomatoes – 2 med finely chopped
Tamarind juice – 1 cup
Fresh Coriander – 1 tbsp chopped
1.Prepare eggs after boiling and Heat pan and drizzle a few drops of oil and fry eggs 2-3 min and sprinkle salt N pepper,remove and keep aside.
2. Heat oil in a wok and add onions and fry till brown and add ginger-garlic paste and fry well for 3-4 mins .
3.Add all the spice powders and stir well add the eggs and fry till well coated and fried. turn off heat when they get roasted well.
4.Now in another the pan add tomatoes and tamarind juice and cover cook till tomatoes are soft and add the prepared egg roast along with 2 cups of water and simmer 3-4 mins.Adjust salt.
5.Turn of heat and transfer into serving bowl and garnish with fresh coriander.
