Crispy Vermicelli Savoury Snack

 

Ingredients

Vermicelli – 2 cups

Potato – 1 large boiled and mashed

Onion – 1 med chopped

Green chilli – 1 minced

Curry leaves – 2 sprigs finely chopped

Plain flour/Maida – 2-3 tbsps

Chickpea flour/Besan – 2 tsps

Salt – as per taste

Red chilli powder – 1/4 tsp

Garam Masala (5 spice Powder) – 1/2 tsp

Method

Take a mixing bowl and combine all the ingredients gently,prepare patties as per your required size and keep.

Heat oil for deep frying and fry the patties till golden brown in colour,remove and drain on paper towels

Serve hot on a cold winter day or a rainy day or for your kids Party as a Savoury  Snack.

Baby Idlis/Sambhar Idlis

Baby Idlis/Sambhar Idlis

 These Idlis are so cute and soft,my kids just love them.These Idlis are prepared with the same batter which i use to make Dosas or normal Idlis at my Home.Just by using this Idli Tray with small slots makes the difference in the looks and kids will love them.These Idlis can be served with Sambhar and is easy to eat so called as Sambhar Idlis.

For the batter

Urad Dal/Split black gram/Minappapu – 1 cup

Rice ( I used normal raw rice) – 3 cups

Cooked rice  – 2 tbsps

Baking soda – 1 pinch

Salt to taste

Method

Wash and soak the dal and rice together for atleast 6 hours.

Now drain off the water and wash again,add the cooked rice and little water ,then grind to a smooth paste as for how we do for dosa batter.

Remove into a airtight container and keep for fermentation over night.

The next day, mix the batter well and take the required batter into a bowl and add few spoons of water,a pinch of soda and salt and combine well.

Grease the Idli Tray as this one and pour the batter with a small spoon/tea spoon.

Place this in the Idli Cooker.I placed this in the steamer basket in the rice cooker and placed the lid and placed the cooker vessel on stove top.But doing this way only 1 tray at a time is done.I did this way to avoid the steam to get around the idlis and which makes them wet somtimes.

As the Idlis are small they just cook in 5-7 mins.Check for doneness with your finger,if you touch and nothing sticks to it,it is done.Take care while opening the lid as there is hot steam inside.

Remove when done and cool for 2 mins and remove each idli with a tsp.

 Enjoy This dish as breakfast or Lunch or Brunch or Dinner….Any time This becomes  a meal when served with vegetable sambhar/sambar or Pappu charu..An energy boosting dish..Enjoy.

 Ingredients

Eggs – 3

Onion – 2 finely chopped

Tomato – finely chopped

Curry  leaves – few

Salt to taste

Red chilli powder – 1 tsp

Turmeric powder – 2 pinches

Oil – 3 tsps

Method

Heat a pan and add oil,drop in the onions and curry leaves fry well till slightly brown and sprinkle Turmeric, salt and red chilli powder and stir well.

Add the chopped tomato and continue stiring and do till oil seperates,now add eggs and leave a min and stir till it becomes scrambled well for about 3-4 mins and turn off heat.

Tastes good with chappatis or parathas or frozen chappatis(To be cooked on tawa ,No need to thaw)

We can add any greens,peas or potatoes and garam masala if desired to this scramble to have a different taste.Try and experiment you’ll love .

Serve in wraps or with toasted bread for kids meal.

 This mince burger is also prepared with the same Mutton Mince Curry .

But to get them into patties  I used just corn flour for dusting and few tsps of oil to shallow fry.

Curried mince patties

 Take a small ball size of minced curry and place on a flour dusted board and slightly press with the knife or spatula and dust some flour over also .Prepare as per the requirement and keep.

Heat a shallow pan and spread little veg oil or cooking spray and gently lift patty with the knife and place on the pan fry both sides till slightly brown and remove.

To prepare pan grilled onions,just heat a griddle or tawa ,when well heated place the thinly sliced or roundels of onions and grill two sides and remove as they turn dark on the edges.

Prepare buns by cutting in the middle and toasting with butter on the cutside and spread tomato ketchup on the bottom and place the patty and few pan grilled onion slices and top with mayonise and finish with the top half of the bun.

The Patties can be prepared in another way too…by taking the washed and drained mince into a mixing bowl,add finely chopped onion,fresh herbs like mint and cilantro(Coriander),Egg whole,Salt and Pepper and mix well make patties and shallow fry till golden brown with oil. These patties are also easy to prepare and tastes good.

My home Pancakes

 
This is my basic recipe of Pancakes which I prepare at home and serve with Golden syrup and Butter.The Pancakes were so fluffy and super soft.I used whole wheat flour and all purpose flour together and cardamom powder for flavour.These pancakes can be made in many different varieties with different toppings and fillings and  served with fruits and syrups.
 
These are small fluffy cakes prepared on a hot griddle cooking on both sides by flipping and stacking one over the other and  served with syrup and butter or fruits.Even whip cream..
 
Ingredients
 
Whole wheat flour – 1 and a 1/2 cup
Plain flour/All purpose flour – 1/2 cup
Cardamom – 2 peel and powder the seeds
Baking soda – a pinch
Baking powder – 1 tsp
Sugar – 1/2 cup
Egg – 1 whole
Milk – 1 and 1/2 cups
Salt – a pinch
Butter – for frying
 
Method
 
Take a mixing bowl and and add all the dry ingredients except sugar and keep,in another bowl crack an egg and add sugar and milk beat well and add the dry ingredients and mix well with the whisk and keep.

Pancake Batter

 Preparation

Heat a pan or griddle and spread butter  and pour a ladleful in three places  and let cook , when this becomes bubbly and fluffy flip and cook the other side and remove .Do not cook more than once on each side,as this may make them stiff..

Stack one over the other and pour Maple syrup or golden syrup and butter and serve warm.

This dish is a south Indian Breakfast Dish,A deep fried item but this  does’nt take up any oil,and is served with chutney and sambhar.Is served as a snack too.Vadas made at home are sure good enough.Prepared by soaking split black gram/urad dal and grinding into a thick batter with very less water.

Ingredients

Urad dal/Split black gram/Minnappapu – 2 cups

Cumin/Jeera – 1/2 tsp

Black pepper – 1/2 tsp

Onion – 1 chopped

salt – as per taste

Baking soda – 2 pinches

Oil for deep frying

Method

Wash and soak the dal for atleast 4 hrs or overnight  to prepare in the morning.

Soaked Urad Dal

Drain and Grind into a smooth batter with very little water.

Vada Batter

Add,salt,Cumin,Pepper,Baking soda and chopped onions.

Batter with other ingredients

Mix well to combine and keep.

Heat oil for deep frying and prepare vadas with wet palms ,use only fingers and make patties and make a hole in the center with your thumb and drop into hot oil,fry till golden brown on both sides and drain into a large bowl with paper towels.They look like doughnuts…

Serve hot With coconut chutney and or with Sambhar.

Easy Onion cilantro Pan Frittata(Omelette)

Onion Cilantro Frittata

This frittata is so easy and I completely made on the stove top,No need of oven you can make it this way when not using cheese.

Ingredients

Eggs – 3

Onion – 1 large sliced finely

Salt

Cilantro/Fresh coriander – a handful

Turmeric powder – 1/8 tsp

Red chilli powder – 1/4 tsp

Oil – 2 tsps

Method

Heat  a small medium shallow pan and add oil,fry sliced onions till light brown and sprinkle red chilli and turmeric powders and add salt stir well a min.

Crack eggs into the pan and combine, lower heat and cover the lid for 2-3 mins .

Open lid and sprinkle fresh cilantro and lightly scrape sides and gently turn the frittata and let brown the other side for 2 mins and flip into a platter, cut into quarters and serve in sandwiches or can have as it is .serves 2.

Serve hot.
