Feel like eating Tandoori Roti….Sure you can even without having a TANDOOR OVEN at home…just try this method of cooking…its fun and worth tasting at the end…

All you need is to prepare dough…and to start with you need the below  mentioned Ingredients.

Plain flour/Maida – 2 cups

Whole wheat flour -1 cup

Salt to taste

Baking soda -2 pinches

Baking powder – 1/2 tsp

Yoghurt/Curd -3 tbsps

Oil – 2 tsps

Water to combine the flours to make dough.

Method

First take a large mixing bowl and combine all the above listed ingredients to get the dough…should look like chapati dough…not too loose or too hard !!!…but just soft and firm.

Cover the dough with a damp cloth and keep covered for about half an hour.

Now divide in to equal portions….you can make nearly 8 rotis with the prepared dough.

Roll out the dough into discs a bit thicker than how we make chapatis and keep

Now here is the Tricky Thing…Place the griddle/tawa on the burner or cook top and heat well till almost it smokes.

Then sprinkle a handful of water onto the hot griddle and IMMEDIATELY put the roti on to the tawa and gently press down so that it sticks to the tawa and let the roti bubble up as shown…

Let it bubble well all over and get cooked on that side…You may burn it or undercook it for the first time but do not worry….Try …and try.

Now this is the crucial part of the TANDOORI ROTI…..now you need to remove tawa from the burner and reverse the roti side down…roti does not fall but you need to rotate the tawa so that the flame touches all over and cook the other side  as shown…

Take care that you not burn …let brown and bubble up…now remove with the spatula and stack till you finish all.

This is the Best Rice dish…Easy to prepare and healthy,as it has lots of vegetables and everyone likes the taste and this dish looks very appetising….just use whatever veggies are available with you if you do not find the ones I preferred..but the taste may vary accordingly!!!

Ingredients

All you need is

A large bowl of cooked rice cooled well or at room temperature approx 300gms

Garlic – 2 cloves minced

Onion – 1 Med Sliced

Carrot – 1 peeled washed and sliced

French beans – 10 trim edges wash and slice diagonally

Cabbage – 1 cup shredded

Capsicum – one half sliced

Spring onion – chopped 1/2 cup

Oil – 4 tbsps

Sauces N Spices

Tomato ketchup – 3 tbsps

Green Chilli Sauce – 1 tsp

Dark soy Sauce – 1 tsp

Salt as per taste

Red Chilli powder – 1/2 tsp

Black Pepper powder – 1/2 tsp

Method

1.Place a large wok on heat let it get heated well on high flame.now add the oil and drop in the garlic and onion first and stir well.

2.Start adding the carrot,beans,capsicum and stir fry 1-2 min add the cabbage and white part of spring onion and fry well for another 2 mins.

3.Now reduce heat to med and add the sauces and spices as mentioned and drop in the cooked rice too.Combine well to incorporate the veggy sauce mix in to rice slowly increase the heat to high and stir 2-3 min and finish of.Turn heat down and remove serve hot with veg manchuria or any saucy veg dish.

Brinjal (Eggplant/Aubergine) Biryani

This Biryani is the Best tasty dish for Vegetarians,as well as Non-Vegetarians as it is full of flavour and taste of the “BIRYANI”……with easily available year long veggy and called as king of all veggies….low in calories along with its good taste….Go ahead and try if you wanna…have a taste!!!

Ingredients

Rice – 4 cups

Brinjals – Dark purple long and tender ones 10-12

Onions – 2 med sliced

Green chillies – 5

Tomatoes – 3 med chopped

Fresh Coriander – 1 cup leaves chopped

fresh mint – 1 cup leaves

Curry leaves – 2 sprigs

Yoghurt/curd – 2 cups whisked

Lemon – 1 whole (Extract Juice)

Ginger garlic paste – 1 tbsp

Biryani masala – 1 tsp (refer  Chicken biryani photo tutorial for masala ingredients)

Whole Garam masala For Rice as given below

Bay leaf  – 1 large

Cloves- 5

Cinnamon – 2” pc

Pepper corns – 1/2 tsp

Oil – 1/2 cup

Ghee/clarified butter – 2 tsp

Salt – as per taste

Red chilli Powder – 1 tsp

Turmeric powder – 1/4 tsp

Coriander powder – 1 tsp

Preparation

1.Wash rice and soak for atleast 1 hour.

2.Wash brinjals and remove stems and slit into quarters towards bulb side leaving a little to keep the whole thing intact,for stuffing masala.place them in salt water till use.

3.Prepare Biryani Masala  as said or with what ever ingredients you have  in hand for biryani.

4.Heat oil and fry sliced onion till golden brown and keep.

5.Chop tomatoes and green chillies and keep.

Method

In a mixie jar take half of the fried onion,biryani masala,2 tbsp yoghurt,half of fresh coriander and mint,2 green chillies and grind to a smooth paste.Now add little salt,red chilli powder,turmeric powder,coriander powder and mix well.

Now drain of the water from the slit brinjals and stuff the prepared masala paste into them and keep the remaining masala aside.

Take a thick bottom vessel and heat oil remaining from fried onion,and add curry leaves and 3 green chillies and add the stuffed brinjals.

Saute gently for a couple of minutes,add the remaining masala and chopped tomatoes,cover cook on low heat for 2-3 mins.

Now add 1 cup of whisked yoghurt to the prepared biryani curry.

As you are doing this,on the other hand boil water  double the measure of rice,add whole garam masala,salt,1 tsp oil,little fried onion and add soaked and drained rice and cook aldente.

Add this cooked rice to the biryani curry prepared and drizzle remaining yoghurt,fried onion,fresh mint and coriander along with lemon juice and melted ghee on top and cover with aluminium foil tightly.

Place the thick bottom vessel on a tawa and on the cooking top or the vessel can be placed in the grill oven(OTG). Keep on med-low for 20-30 mins.

Remove foil carefully and serve hot with raita of your choice.

Goes well with Gongurachicken or any sorrel leaves(gongura) chutney.Refer Chutneys…

 Ingredients

Eggs – 3

Onion – 2 finely chopped

Tomato – finely chopped

Curry  leaves – few

Salt to taste

Red chilli powder – 1 tsp

Turmeric powder – 2 pinches

Oil – 3 tsps

Method

Heat a pan and add oil,drop in the onions and curry leaves fry well till slightly brown and sprinkle Turmeric, salt and red chilli powder and stir well.

Add the chopped tomato and continue stiring and do till oil seperates,now add eggs and leave a min and stir till it becomes scrambled well for about 3-4 mins and turn off heat.

Tastes good with chappatis or parathas or frozen chappatis(To be cooked on tawa ,No need to thaw)

We can add any greens,peas or potatoes and garam masala if desired to this scramble to have a different taste.Try and experiment you’ll love .

Serve in wraps or with toasted bread for kids meal.

 This mince burger is also prepared with the same Mutton Mince Curry .

But to get them into patties  I used just corn flour for dusting and few tsps of oil to shallow fry.

 Take a small ball size of minced curry and place on a flour dusted board and slightly press with the knife or spatula and dust some flour over also .Prepare as per the requirement and keep.

Heat a shallow pan and spread little veg oil or cooking spray and gently lift patty with the knife and place on the pan fry both sides till slightly brown and remove.

To prepare pan grilled onions,just heat a griddle or tawa ,when well heated place the thinly sliced or roundels of onions and grill two sides and remove as they turn dark on the edges.

Prepare buns by cutting in the middle and toasting with butter on the cutside and spread tomato ketchup on the bottom and place the patty and few pan grilled onion slices and top with mayonise and finish with the top half of the bun.

The Patties can be prepared in another way too…by taking the washed and drained mince into a mixing bowl,add finely chopped onion,fresh herbs like mint and cilantro(Coriander),Egg whole,Salt and Pepper and mix well make patties and shallow fry till golden brown with oil. These patties are also easy to prepare and tastes good.

Sloppy Mutton Mince Burger

 This is a sloppy burger,as you can see I used the Mutton Mince Curry and not a Patty so .. a Sloppy Burger,Great for Packing Kids Lunch or as a Snack or even breakfast if you keep this curry ready in the refrigerator(Keeps good for 1-2 Days).I’ve used small Buns to make it easy for my kids to enjoy and looks Great.

To Prepare this all you need is 

Pre Prepared Mutton Mince Curry – 1 cup ( See Recipe in Mutton-Lamb Category for the mutton Mince Curry)

Caramelized onion – 1 cup

Mayonise – few tbsps

Tomato Ketchup – 1/2 cup

Sliced Tomato

Sliced Cucumber

Burger Buns small – 6-7

Butter – 1 stick

To assemble

First to caramelise the onion,Slice the onions finely and place a pan on heat and add little butter and drop the onions stir on high for 2 mins and reduce to med heat and keep till they get well browned and soft ,stir in between and remove

Cut the buns in to half and toast with little butter  with cut side down and keep.

Small Burger Buns

Now spread 1/2 tsp of ketchup on the bottom side of the bun and place 1 tbsp of mince curry and then the caramelised onion a tsp,a slice of each tomato and cucumber, and a dollop of mayonise and lastly the top of the toasted bun and secure with the picks.

We can add few lettuce,raw onion or Cheddar Cheese slices to make a variation according to our choice and availability and Kids options….These are Tasty,Healthy and Homemade Version of Sloppy Burgers..

 Can be served for Kids Birthday Parties as comfort food.

 Ingredients

Spinach/Palakura – 1 bunch.washed and chopped leaves

Potato – 3 med peeled and cubed

Onion – 1 finely chopped

Green chilli – 2-3 sliced

Cumin/jeera –  1/2 tsp

Oil – 2 tsps

Salt – to taste

Turmeric powder – 1/6 tsp

Chaat masala – 1/2tsp

Method

Heat oil in a pan,drop in the cumin seeds and then green chillies and onions and fry 3-4 mins and add potato cubes stir fry on high for few secs and then on med heat till crust forms on potatoes and centre is cooked.

Add the turmeric powder and spinach and stir fry add salt and chaat masala and combine .

Turn of heat and Serve Hot,Goes well with Chappatis or Rotis.
