Mint Chutney….Also Called Green Chutney
Fresh mint leaves – 1 bunch
Cilantro ( fresh Coriander) – a handful
Green chili – 1 deseeded and chopped
Garlic – 1 pod sliced
Cumin ( Jeera) – 1/2 tsp
Salt – as per taste
Lemon juice – !/2 tsp
Yoghurt – 2 tbsps
1.Separate mint leaves from stalks and wash and drain and the cilantro too.
2.Take a mixer jar and add all the above ingredients one by one and grind to a smooth paste.Thats it green chutney is ready to go.
3.Transfer into a serving bowl and use as you wish.
I normally use this to make sandwiches and as a dip for snacks or with chicken or meat appetizers.Or even for few Chaats this chutney is used.

SPINACH (Palak) CHUTNEY
•Spinach – 2 packs
•Fresh corainder – 1 pack
•Green chillies – 2-3
•Onions – 2 medium
•Tomato – 1 large
•Curry leaves – 1 sprig
•Oil – 3 tbsp.
•Salt – As per taste
•Garlic – 2 pods
•Turmeric powder – half tsp.
•Dhaniya/Coriander powder – half tsp.
•Chilli powder – half tbsp.
•Garam masala – 1 pinch
•Clean and chop the spinach leaves, fry in 1 spoon oil till it wilts for around 3-4 mins.
•Heat another pan, add oil, onions, curry leaves, green hilli chopped garlic, fry till transluscent
•Now to make green paste, take wilted spinach, the above fresh coriander and half of the fried onions and blend into a coarse paste.Keep aside
•Add chopped tomatoes to the remaining onions in the pan, cover cook till soft. Then add all powders and salt, stir well then add above green paste.
•Cook 3-4 mins. (AT THIS POINT YOU CAN ADD DEFROSTED PANEER OR FRIED PANEER CUBES IF YOU WISH)… I tried, it is surely tasty
•Remove into a seving bowl..Serve with rice or chappati.
